How to Roast Vegetables Like a Pro

Roasting brings out vegetables' natural sweetness. Here's how to get perfectly caramelized results.

High heat and proper spacing transform vegetables. Here's how to roast like a professional.

The key is high heat (425°F or higher), enough space (don't crowd—use two pans if needed), and enough oil (vegetables should be lightly coated, not swimming).

Toss vegetables with oil, salt, and pepper. Spread in a single layer on a sheet pan. The Nordic Ware Sheet Pan distributes heat evenly.

Roast until edges are golden and centers are tender. Toss halfway through. Different vegetables cook at different rates—par-cook dense vegetables before adding tender ones.

For the best results, use a heavy-duty sheet pan that won't warp at high heat.
