How to Season a Cast Iron Skillet Like a Pro

Understanding Seasoning
Seasoning is the process of polymerizing oil onto the surface of your pan, creating a natural, non-stick coating. This isn't about coating the pan—it's about changing the molecular structure of the iron itself. When you heat oil past its smoke point, the oil molecules bond to the metal, creating a slick surface that improves with each use.
My Seasoning Process
The best results come from multiple thin layers rather than one thick coat. Here's my method that I've refined over decades: first, thoroughly clean your pan with hot water and a stiff brush. If it's a new pan, scrub off any factory coating. Then dry completely—any moisture will cause rust. Apply a thin layer of flaxseed oil (the best option for seasoning), using a paper towel to wipe away excess until the surface appears almost dry. Place the pan upside down in a 450°F oven and bake for one hour. Let it cool naturally, then repeat this process three to five times.

Maintaining Your Seasoning
