The Secret to Perfect Cookie Sheets (It Isn't What You Think)

The Problem: Hot Spots

Most cookie sheets have uneven heat distribution. This causes burning on one side, raw dough on another. The thin aluminum sheets you find at the grocery store are the worst offenders.

The Solution: Heavy-Duty Aluminum

Heavy-duty aluminum sheet pans with rims are what professional bakeries use. They distribute heat evenly, maintain consistent temperature, and last for years.

The Nordic Ware Natural Aluminum Commercial Baker's Half Sheet is the gold standard—about twenty dollars each. These are what serious home bakers use.

For a more affordable option that still works well, the USA Pan Bakeware Half Sheet at about fifteen dollars is excellent.

Tips for Better Cookies

Line with Parchment: Never grease. Parchment creates the perfect release and helps cookies brown evenly. I use Kirkland Signature Parchment Paper—it's affordable and works perfectly.

Don't Crowd: Air needs to circulate. Leave at least two inches between cookies. If they're too close, they steam instead of bake.

Rotate Halfway: Ovens have hot spots. At the halfway mark, switch the pan from front to back and rotate it one hundred eighty degrees.

Cool Completely: Cookies set up as they cool. If you move them too soon, they break. Let them rest on the sheet for two minutes, then transfer to a wire rack.

What to Avoid

Dark Sheets: They absorb more heat and cause browning. Silver is better than black.

Nonstick: The coating can interfere with browning and doesn't last.

Insulated Sheets: They cool too slowly and cause uneven baking.
