Performance Testing - I tested the pan for migas, scrambled eggs,quesadillas, and roasted chicken. The shallow sides make flip and fold easier than a deep pan. The heat distribution is even. The pan retains heat well when adding cold ingredients. Specs - 12 inch diameter, 1.5 inch depth, dual handles, preseasoned, about 5 lbs.
